Nestled in the Espírito Santo Mountains of eastern Brazil, Sítio Córrego da Aldeia is a smallholder coffee farm located in Vargem Alta and run by the Pasti family for over 80 years. With its unique climate, the region allows for slow cherry maturation and careful cultivation on smaller farms. Since 2005, the family has focused on specialty coffee, investing in sustainable practices, soil health, and quality processing methods. This lot of Red Catuaí was processed using the Pulped Natural method and dried on raised beds in greenhouses, resulting in a meticulously crafted and environmentally conscious coffee.
